The hardest part is the food prep &#8211; chopping the veggies. The rest is simple!\u00a0I make this recipe often as a good go-to lunch option and it\u2019s easy to bring with to work! I freeze about half of the soup once it\u2019s cooled. A couple weeks later I bring it out of the freezer and I have another whole week of lunch ready to go! I recommend eating with fresh bread or crackers.&#8221;<\/em> &#8211; Gina<\/p>\n<h3><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-995\" src=\"https:\/\/www.webarre.com\/hk\/wp-content\/uploads\/2020\/01\/IMG_9522-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" \/><\/h3>\n<h3>INGREDIENTS<\/h3>\n<ul>\n<li><span data-amount=\"3\" data-unit=\"tablespoon\">3 tablespoon<\/span>s extra virgin olive oil<\/li>\n<li><span data-amount=\"1\">1<\/span>\u00a0medium yellow onion, chopped<\/li>\n<li><span data-amount=\"3\">1 cup<\/span>\u00a0carrots, diced<\/li>\n<li><span data-amount=\"1\">1<\/span>\u00a0cup zucchini, diced<\/li>\n<li>1 cup yellow bell pepper, diced<\/li>\n<li>1 cup sweet potatoes, chopped<\/li>\n<li><span data-amount=\"6\">6<\/span>\u00a0garlic cloves, finely minced<\/li>\n<li><span data-amount=\"1\">1<\/span>\u00a0can (400g) diced tomatoes<\/li>\n<li><span data-amount=\"1\">1<\/span>\u00a0can (400g) garbanzo beans, rinsed and drained thoroughly<\/li>\n<li><span data-amount=\"1\" data-unit=\"cup\">1 cup<\/span>\u00a0chopped kale leaves (remove the hard middle stems)<\/li>\n<li><span data-amount=\"1\" data-unit=\"cup\">1 cup<\/span>\u00a0uncooked quinoa, rinsed very well<\/li>\n<li><span data-amount=\"4\" data-unit=\"cup\">4 cup<\/span>s\u00a0vegetable broth<\/li>\n<li><span data-amount=\"2\" data-unit=\"cup\">2 cup<\/span>s water<\/li>\n<li><span data-amount=\"1\" data-unit=\"teaspoon\">1 teaspoon<\/span>\u00a0salt, or to taste<\/li>\n<li><span data-amount=\"2\">2<\/span>\u00a0bay leaves<\/li>\n<li><span data-amount=\"0.5\" data-unit=\"teaspoon\">\u00bd teaspoon<\/span>\u00a0dried thyme<\/li>\n<li>A dash red pepper flakesg<\/li>\n<li>Ground black pepper<\/li>\n<li><span data-amount=\"1\">1<\/span>\u00a0to\u00a0<span data-amount=\"2\">2<\/span>\u00a0teaspoons lemon juice, or to taste<\/li>\n<li>Freshly grated Parmesan<\/li>\n<\/ul>\n<\/div>\n<div class=\"tasty-recipe-instructions\">\n<h3>INSTRUCTIONS<\/h3>\n<ol>\n<li>Warm the olive oil in a large soup pot over medium heat. Add the chopped onion, carrot, zucchini, bell pepper and sweet potato and a pinch of salt. Let the vegetables cook, stirring often, until the onion has turned soft and translucent, about 6 to 8 minutes.<\/li>\n<li>Add the garlic and thyme. Stir frequently, about 1 minute. Pour in the diced tomatoes with their juices and cook for a few more minutes. Keep stirring!<\/li>\n<li>Add the quinoa, vegetable broth and water. Add 1 teaspoon salt, 2 bay leaves and a dash of red pepper flakes. Season with ground black pepper. Turn the heat up to high, and bring the mixture to a boil. Place a wooden spoon over the top of the pot and cover with its lid, leaving it partially open to allow steam to escape. Reduce heat to low and let the soup simmer gently.<\/li>\n<li>Simmer for 25 minutes, then remove the lid and add the beans and kale. Continue simmering for another 5 minutes or more.<\/li>\n<li>Remove the pot from heat, then take the bay leaves out.
